Baga grapes planted on chalky-clay soils. Vinified through a slight pressure, in a vacuum press to obtain a juice yield that doesn't exceed 60%. It is followed by fermentation in stainless steel vats. As the second fermentation occurs inside the bottle, the wine matures three to nine months on the lees.
It should be served at 8°C.

Food pairing:Ideal wine to pair with roasted sucking pig and even orange, since the inexistence of tannins doesn’t collide with the citric taste of the orange. It also harmonizes with fish, shellfish, roasted meats in the oven.

"The 2013 Vinha Formal is all Bical, but for 15% Cercial da Bairrada added in. It was blended in a 50-50 mixture of new and used French oak for eight months. It comes in at 13.0% alcohol. I have come to really appreciate this bottling. While I'm not positive as yet that this is the equal of the recently seen 2011, it is pretty close and pretty nice in its own right. Tightly wound, with fine acidity, it is persistent and lingering with a fresh and lively feel to it. It handles its oak beautifully and shows fine balance. I'm always conservative in drinking windows--it may well last considerably longer if you have good storage--but exercise some judgment. There were 17,000 bottles produced." - erobertparker.com

"The 2015 Branco Vinhas Velhas is 50% Bical, with 25% each of Cerceal and Sercialinho. Surprisingly dense and full for this level, this is unevolved and shut pretty tight just now. (It was seen not too long after bottling.)

Showing beautiful acidity, very fine depth and a crisp, penetrating finish, this needed some time to sort itself out. It drank a ot better some hours after it was first opened, still showing remarkable grip on the finish for this level. Granting that I saw it relatively soon after bottling, this is nonetheless powerful, tight and closed, with plenty of potential to improve with cellaring. The fine acidity and grapefruit nuance coupled with mid-palate concentration means it will likely do better with foods than its on its own, but it should eventually pull itself together well.

At the moment, it is well worth leaning up, but it is mostly about the potential. It will likely show far better in the Summer of 2017. It should also hold well. It's a very nice bargain. Sourced from vines averaging over 30 years in age, there were 18,000 bottles produced." - erobertparker.com

Luis Pato (Portuguese for ‘duck’) is the best-known producer in the Bairrada region. He is widely regarded as the modernizer who brought a struggling region back to life. He is also a champion of the local, noble red grape, Baga. Pato could be considered as a neo-traditionalist, a forerunner and visionary of the heritage of the region.
